One-dish meals are winners. Most are quick and easy to prepare and of course there is the bonus of less washing up.
Ingredients
6 medium | Tomatoes, chopped |
1 | Onion, peeled, quartered and sliced |
4 cloves | Garlic, peeled then smashed |
500 g | Squid ring, thawed if frozen (Main) |
1 can | Chickpeas, 390g, washed and drained (Main) |
3 Tbsp | Olive oil |
1 tsp | Smoked paprika |
1 cup | Water |
1 bunch | Thyme, tied with string |
3 | Chorizo sausages |
1 ½ cups | Frozen peas |
Directions
- Place the tomatoes, onion, garlic, squid rings, chickpeas, olive oil, paprika, water and thyme in a Dutch oven or heavy-based saucepan. Cover, bring to the boil, then reduce the heat and simmer for 30 minutes, stirring occasionally.
- Squeeze the meat from the sausages, making 4 little balls from each. Add to the saucepan. Simmer for 5 minutes. Add the peas and black pepper. Continue cooking for another 5 minutes.
- Serve in bowls with plenty of crusty bread to mop up the juices.
