Taste it and find out! This relish if great in sandwiches or with cold meat and cheeses
Ingredients
| 1 ½ kgs | Tomatoes, Green Tomato's (Main) | 
| 3 medium | Onions | 
| 1 stalk | Celery stalk | 
| 1 medium | Red capsicum | 
| 1 medium | Green capsicum | 
| 350 g | Sugar | 
| 400 ml | White vinegar | 
| ½ tsp | Ground cinnamon | 
| ½ tsp | Ground cloves | 
| ½ tsp | Allspice | 
| ½ tsp | Cayenne pepper | 
| 1 ½ tsp | Celery seeds | 
| 3 Tbsp | Salt | 
| 1 tsp | Chilli flakes | 
| 3 tsp | Cornflour | 
Directions
- Clean and sterlise 5-7 jars and lids ( total approx 2 litres ) I always prepare more jars than I think I will need
- Remove stems and cores from tomatoes, peel onions, remove seeds from capsicums, quarter all vegetables, process all in a food processor till minced
- Heat sugar vinegar and spices till boiling than add minced vegetables, boil 10 minutes stirring occasionally. Mix cornflour with water to make a paste and add to relish boil and stir for two more minutes to allow to thicken. (You may add more or less cornflour to get the correct 'relish' consistency.
- Pack into hot sterilized jars seal leave for two weeks. Once opened refrigerate.
