This recipe uses a frozen vegetable mix of beans, red capsicum, carrots, broccoli and spinach. You can use any combination of frozen vegetables that you have on hand.
Ingredients
| 1 large | Diced onion |
| 1 Tbsp | Canola oil |
| 4 cloves | Chopped garlic |
| 4 | Pork shoulder chops, or use loin chops, trimmed (Main) |
| 1 can | Diced tomato, 500g (Main) |
| 2 Tbsp | Tomato paste |
| 1 Tbsp | Smoked paprika |
| 3 sprigs | Sage |
| 4 cups | Frozen mixed vegetables, I used Supermix (Main) |
Directions
- Sauté the onion in the oil until softened. Add the garlic and stir for 1 minute. Place in the base of a slow cooker. Top with the chops.
- Combine the tomatoes with the tomato paste and pour over the chops. Sprinkle with the paprika and sage. Cover and cook on low for 6 hours. Add the frozen vegetables. Cover and continue cooking for 1 hour.
