Ingredients
2 cups | Cucumbers, (diced) |
2 cups | Pineapples, (diced) |
3 | Limes, (zested and juiced) |
1 Tbsp | Toasted sesame seeds |
2 Tbsp | Mint leaves, (shredded) |
Dressing
2 Tbsp | Coconut cream |
1 | Lime, (½ tbsp juice) |
1 Tbsp | Palm sugar |
1 tsp | Fish sauce |
1 tsp | Sesame sauce |
1 Tbsp | Water |
Directions
- Put the cucumber and pineapple into a bowl.
- Add the lime juice and zest, then the sesame seeds and fresh mint leaves. Stir to combine.
- To make the dressing, put all the ingredients into a bowl over a saucepan of simmering water.
- Gently stir until the sugar has melted and the flavours have combined, then spoon over the salad with extra sesame seeds and mint leaves to garnish
