Ingredients
| 100 g | Rocket, Mediterranean wild (Main) |
| 8 | Sundried tomatoes, drained, patted dry and sliced |
| 8 | Kalamata olives, pitted |
| 150 g | Mozzarella cheese, fresh, (buffalo preferably), sliced |
| 1 to taste | Shaved parmesan |
| ¼ cup | Balsamic vinegar |
Directions
- Place the rocket on a plate or in a bowl.
- Top with the sundried tomatoes, olives, mozzarella and parmesan.
- Just before serving sprinkle with the dressing.
