Ingredients
1 Tbsp | Olive oil |
1 Tbsp | Butter |
6 | Peaches, choose ripe ones - halve, stone and peel (Main) |
2 Tbsp | Maple syrup |
4 Tbsp | Lemon juice |
1 | Baguette, or ciabatta, lightly toasted. Allow 2 slices per person. |
200 g | Goat's cheese (Main) |

Directions
- Heat the oil and butter in a heavy frying pan. Pan-fry the peaches on medium-low heat, cut-side down, for 5 minutes.
- Add the maple syrup and lemon juice and continue cooking until soft, turning occasionally. Season.
- Spread the crostini with goat's cheese and top with the warm peaches and juices.
