Ingredients
1 large | Tomato, yellow or green, diced (Main) |
2 | Radishes, diced |
2 | Spring onions, trimmed and finely chopped |
1 | Chilli, deseeded and finely chopped |
1 | Lime, juice only |
1 tsp | Olive oil |
1 handful | Coriander leaves, roughly chopped |
Directions
- Mix all the ingredients together in a bowl. Cover and keep in the fridge. Flavours will mingle and improve with standing. When ready to serve, remove from the fridge and season with salt.
- Serve salsa with barbecued pork medallions or pork chops. New potatoes and a green salad complete the meal.
