Ingredients
| 1 | Onion, diced |
| 1 Tbsp | Oil, (salad style) |
| 3 cups | Brown rice, cold or basmati rice (Main) |
| 3 Tbsp | Hoisin sauce |
| 1 cup | Pineapple, fresh or canned cubes (Main) |
| 1 cup | Cucumber, sliced |
| ¾ cup | Cherry tomatoes, halved |
| 1 cup | Toasted cashew nuts |
Dressing
| ½ tsp | Curry powder |
| ¾ cup | Yoghurt, plain (Main) |
| 3 Tbsp | Mayonnaise |
Directions
- Saute onion in oil over low heat, until softened.
- Add rice and hoisin and mix well.
- Place in a salad bowl with remaining ingredients.
- Dressing: 3/4 cup plain yoghurt, 1/2 tsp curry powder and 3 tbsp mayonnaise.
