Ingredients
| 200 g | NZ hot smoked salmon (Main) |
| 2 | Nectarines, ripe and juicy, use up to 3; halved and stoned (Main) |
| 1 | Lebanese cucumber |
| ½ cup | Mayonnaise |
| 1 tsp | Curry powder |
| 2 Tbsp | Coriander, chopped leaves and stalks |
| 2 | Spring onions, trimmed and finely sliced |
| 1 handful | Salad greens, optional |
Directions
- Break the salmon into pieces. Cut the nectarines into wedges. Halve the cucumber lengthways, discard the seeds and diagonally slice.
- To make the dressing, combine the mayo, curry powder, coriander and spring onion.
- Place the cucumber, salmon and nectarines on a plate on salad greens if using. Season with salt and pepper and drizzle with the dressing.
