Lentil and quinoa salad
|1 cup||Brown lentils, cooked (Main)|
|1 cup||Quinoa, cooked (Main)|
|1 cup||Basil, chopped|
|1 cup||Parsley, chopped|
|¼ cup||Coriander, chopped|
|¼ cup||Mint, chopped|
|1||Spring onion, finely chopped|
|½ cup||Cucumbers, chopped|
|3||Medjool dates, fresh, sliced (optional)|
|½ cup||Red capsicums, chopped|
|½ cup||Cashew nuts, raw|
|3 Tbsp||Olive oil|
|½ ||Lemons, juice of|
- Mix all ingredients together.
- Pur dressing over and season with salt and pepper.
