The honeydew soup is definitely a summer-time favourite. We used to have it years ago, made of honeydew melons grown by a local farmer. Mum would buy them for 20c each! Here, I have added some extra summer flavour with ginger, mint and coconut water.
Ingredients
| 1 | Honeydew melon, peeled and seeds removed (Main) | 
| 1 Tbsp | Fresh ginger, grated | 
| ½ cup | Fresh mint | 
| 1 cup | Coconut water | 
| ½ | Limes, or lemon, zest and juice | 
| 1 serving | Fresh mint, extra, to garnish | 
| 1 serving | Ice, crushed | 
Directions
- In a processor place the melon, ginger, mint, coconut water and lime. Whiz until smooth and fluffy. Chill in the fridge until needed.
- Before serving, season with a little salt and pepper. Serve in individual bowls with extra mint and crushed ice.
