For the salad
| 1 cup | Broccoli florets (Main) |
| 1 medium | Beetroot, raw, peeled and julienned (Main) |
| 1 cup | Cucumber, diced |
| 1 cup | Black beans, cooked, drained and rinsed (Main) |
| 2 Tbsp | Mint, sliced |
| 2 Tbsp | Fresh italian parsley |
| 2 Tbsp | Coriander |
| 1 packet | Baby kale, 120g (Main) |
| 2 tsp | Pumpkin seeds |
| 2 tsp | Sunflower seeds |
For the dressing
| ½ cup | Vinaigrette, use up to ¾ cup, use a good one |
Directions
- Blanch the broccoli, until crisp-tender. Refresh in icy water. Drain well.
- Place all the salad ingredients in a bowl and toss. Drizzle the dressing over the salad. Mix well.
