Ingredients
| 50 g | Butter |
| ½ cup | Brown sugar |
| 2 tsp | Ground ginger (Main) |
| 1 | Egg |
| 2 Tbsp | Golden syrup |
| 1 cup | Plain flour |
| ½ cup | Milk |
| 1 tsp | Baking soda |
| 1 Tbsp | Butter, (or approximately 15g extra) |
Directions
- Preheat oven to 200C. Put the gem irons in the oven to heat.
- Cream the butter, sugar and ginger until pale. Add the egg and beat well, then add the golden syrup.
- Sift the flour and gently stir through the mixture. Dissolve the baking soda in the milk then add.
- Remove the hot irons from the oven and place small pieces of butter into each. Spoon the mixture on top and bake for 12-15 minutes or until risen and golden.
