Topping

2 tspGround cinnamon (Main)
½ cupWalnuts, chopped
½ cupBrown sugar
50 gButter

Cake

1 ½ cupsPlain flour
2 tspBaking powder
1 tspBaking soda
¾ cupSugar
125 gButter, chopped
2Eggs
½ cupMilk
1 tspVanilla essence
4 mediumFeijoas, peeled and diced (Main)

Directions

  1. Preheat the oven to 180C. Line a 20cm square cake pan with baking paper.
  2. To prepare the topping, place all the ingredients into a food processor and blend until the nuts are finely chopped. Place aside.
  3. To prepare the cake, place all the ingredients — except the feijoas — into a food processor in the order listed. Blend until the mixture is well combined.
  4. Fold in the feijoas. Spoon into the prepared cake pan. Sprinkle the topping over the batter. Bake for 35-40 minutes, until the cake is golden-brown and comes away from the sides.
  5. Great served warm with cream orFeijoa Passion.
