Locatoes are lower carbohydrate potatoes. This recipe also uses smoked salmon with black pepper seasoning.
Topping
500 g | Locatatoes |
2 Tbsp | Butter |
2 Tbsp | Milk |
1 pinch | Salt and pepper, to taste |
Cheese Sauce
25 g | Butter |
3 Tbsp | Plain flour |
1 ½ cups | Milk |
1 cup | Grated tasty cheese |
Filling
3 cups | Frozen mixed vegetables, such as corn, carrot and peas. |
200 g | Smoked fish, skinned and boned, flaked coarsely (Main) |
Directions
- Peel and chop the Locatoes. Boil or microwave, until cooked. Drain then add the butter and milk. Season. Mash well.
- Meanwhile, melt the butter in a saucepan. Stir in the flour. Whisk in the milk, cooking and stirring on low heat, until thickened. Stir in the cheese.
- Preheat the oven to 190°C.
- Combine the chuck wagon mix with the cheese sauce and smoked fish. Place in a 21cm casserole or baking dish. Top with the mashed potato. Brush the top with melted butter, if preferred. Bake for 35 minutes until very hot and golden.
