Egg sandwiches are a fave with young and old. Sneak some vegetables in for extra goodness. The eggs can be hard-boiled the night before.
Ingredients
| 4 | Hard-boiled eggs (Main) |
| 3 Tbsp | Mayonnaise (Main) |
| ¼ cup | Carrots, finely grated |
| ½ cup | Celery, finely diced |
| 1 Tbsp | Finely chopped chives, or parsley |
Directions
- Mash the eggs together with the mayo and salt and pepper to taste. Fold in the remaining ingredients.
