Ingredients
| 1 Tbsp | Olive oil |
| 300 g | Spaghetti (Main) |
| 1 | Onion, diced |
| 4 | Eggs, lightly beaten |
| 1 | Courgette, julienned (Main) |
| ½ cup | Parmesan cheese, grated |
| 1 to taste | Freshly ground black pepper |
Directions
- Cook the spaghetti according to the packet instructions.
- Heat the oil in a large frying pan. Saute the onion, until softened.
- Add the courgettes and stir-fry until just tender.
- Drain the cooked spaghetti and add to the pan.
- Stir in the eggs and cook on low heat, stirring, until the eggs are "scrambled".
- Add the cheese and pepper.
