The fat content of these biscuits means they will provide you with a sustained release of energy right through the afternoon. Using almond meal provides some extra vitamin E. Substitute a lemon if you’re not able to access limes.
Ingredients
| 25 ml | Coconut oil |
| ¼ cup | Honey |
| ½ | Limes, zested and juiced (Main) |
| 1 cup | Almond meal |
| ½ cup | Spelt flour |
| ½ cup | Desiccated coconut |
| 2 tsp | Baking powder |
Directions
- Heat oven to 180C.
- Gently melt oil, honey and lime juice in a saucepan.
- Place all dry ingredients and the lime zest into a bowl as well and mix gently.
- Heap tablespoons of the dough on to a lined baking tray and bake for 8-10 minutes.
