Excellent accompanied by rice and steamed greens..
Ingredients
1 | Onion, diced |
2 Tbsp | Oil |
1 | Carrot, shredded |
½ cup | Mushrooms, sliced |
6 | Eggs, lightly beaten |
1 tsp | Soy sauce |
1 to taste | Salt & freshly ground pepper |
Directions
- Heat the oil in a medium-sized frying pan.
- Saute the onion until just tender.
- Add the carrots, mushrooms and bean sprouts.
- Stir-fry for two minutes.
- Combine the eggs and seasonings.
- Pour over the vegetables. Swirl to coat the pan.
- Cook on medium until golden on the base.
- Invert on to a plate then slip back into the pan to brown the other side. Serve in wedges.
