Serves one hungry person or two as a light meal.
Avocado salsa
| 1 medium | Avocado, halved, stoned, peeled and diced (Main) |
| 1 | Lime, finely grated rind and juice |
| ¼ cup | Coriander, finely chopped |
| 4 | Cherry tomatoes, quartered |
Eggs
| 2 Tbsp | Olive oil, use up to 3 |
| 2 large | Eggs (Main) |
| 1 | Chilli, sliced |
| 2 slices | Ciabatta bread, toasted (Main) |
Directions
- Combine all the salsa ingredients in a bowl.
- Heat the oil in a medium frying pan on medium. Add the eggs and the chilli. Fry until the whites are golden around the edges.
- Pile a little salsa on the toasted ciabatta on serving plates. Top with the eggs. Add the remaining salsa on the side and drizzle with the chilli oil.
