Ingredients
| 3 Tbsp | Canola oil |
| 2 | Onions, diced |
| 2 tsp | Chillies, diced |
| 2 cloves | Crushed garlic |
| 2 tsp | Curry powder |
| 1 Tbsp | Fresh ginger, grated |
| 3 | Large ripe tomatoes, chopped (Main) |
| 500 g | Chicken breasts, skinned, boned cut into 2.25cm cubes (Main) |
| ½ cup | Natural yoghurt |
Directions
- Heat the oil in a large heavy saucepan. Saute the onions until golden.
- Add the garlic, chilli, curry powder, ginger and tomatoes. Cover and simmer for 2 minutes.
- Add the chicken to the pan. Cover and simmer for 10 minutes, until cooked.
- Stir in the yoghurt. Serve with poppadums and rice.
