Ingredients
| 50 g | Butter |
| 1 | Onion, finely diced |
| 550 g | Peas, fresh or frozen (Main) |
| 6 leaves | Lettuce, sliced (Main) |
| 70 ml | Chicken stock |
| 1 to taste | Salt & freshly ground pepper |
| 1 Tbsp | Caster sugar |
Directions
- In a heavy based saucepan, melt the butter over a low heat. Add the onion and cook for two minutes until soft.
- Add the peas, lettuce and chicken stock. Season to taste.
- Cover the pan and simmer the vegetables gently for three minutes.
- Add sugar, replace the lid and simmer for another three minutes.
- Turn into a heated vegetable dish and serve immediately.
