Ingredients
| ½ cup | Raw almonds (Main) |
| ½ cup | Medjool dates (Main) |
| ¼ cup | Shredded coconut, or coconut chips |
| 3 Tbsp | Walnuts, toasted |
| 1 Tbsp | Sunflower seeds, toasted |
| 2 Tbsp | Crown Range Cellar Manuka & Lemon Honey |
| ½ tsp | Crown Range Cellar Blackcurrant Powder, use up to 1 tsp |
| 1 | Lemon, zest and juice only |
| 2 Tbsp | Pistachio nuts, finely chopped for rolling, or toasted coconut |
Directions
- Place all the ingredients except the pistachio nuts in a food processor and process until combined, with the mixture still retaining some texture.
- Roll mixture into even-sized balls, then roll them in the pistachios. Store in an airtight container in the fridge.
