Great with a green salad and crusty rolls.
Ingredients
| 1 cup | Water |
| ½ cup | Quinoa (Main) |
| 420 g | Canned black beans, rinsed and drained (Main) |
| 1 | Red pepper, diced |
| 1 cup | Whole kernel corn |
| 1 cup | Cucumber, diced |
| 1 cup | Cabbage, shredded |
| 2 | Spring onions, diced |
| ¼ tsp | Ground cumin |
| ½ cup | Vinaigrette, good quality |
Directions
- Simmer the quinoa in the water for 10 minutes.
- Combine the beans and vegetables. Stir in drained quinoa.
- Combine cumin and dressing.
- Toss the salad with the dressing just before serving.
