A healthy pizza for two. I used the new variety of Sweet Tango apple.
Ingredients
| 1 large | Red onion, thinly sliced |
| 1 Tbsp | Olive oil |
| 1 Tbsp | Balsamic vinegar |
| 1 Tbsp | Brown sugar |
| 1 | Pizza base, 30cm thin base (Main) |
| 1 small | Apple, peeled, cored and thinly sliced (Main) |
| 150 g | Goat's cheese, broken into pieces (Main) |
| ½ cup | Spinach, sliced |
| ½ cup | Basil leaves, chopped |
| ¼ cup | Parsley, chopped |
| 1 Tbsp | Chopped rosemary |
| 1 Tbsp | Extra virgin olive oil |
Directions
- Preheat the oven to 200C. Lightly oil an oven tray and place in the oven to heat.
- Gently sauté the onion in the oil, until softened. Stir in the vinegar and brown sugar. Cook on low until the liquid has evaporated.
- Spread over the pizza base. Top with the apple, goat's cheese and spinach leaves. Bake for 20-25 minutes until the base is crisp. Sprinkle with the herbs and drizzle with the olive oil.
