We're getting set for the holidays with easy but tasty ways using all that glorious summer produce. Lettuces, for those of us with vegetable gardens, are growing by the day and it can be hard getting through them all. Salads aside, they make excellent side dishes on the barbecue.
Ray grills his to serve alongside a butterflied leg of lamb with mushrooms and feta cream, and Kyle Street grills his to tweak a classic Caesar salad.
Sweetcorn should be on everyone's menu now and it's a barbecue star, too, of course. Pull back the husks to reveal the silks, pull the husks back around the cob and barbecue for around 8-15 minutes, less time with husks removed. Spike up those cobs and serve them with Karena and Kasey's chilli herb butter.
The microwave also makes very easy work of it: remove the very outer leaves only and cook the cob on high for around 2 ½ minutes.
