Once a humble side dish, cauliflower has become a star attraction these days, thanks to both its size and versatility.
Here are some of our favourite ways to use cauli!
Cauliflower rice is a great way to boost your daily vege intake. Simply grate florets or place in a food processor and blitz to a medium crumb. Serve raw in warm salads or dry roast in the oven for 10-15 mins. Never boil cauliflower rice as it will morph into watery, tasteless sludge.
Cauliflower also makes an excellent gluten-free pizza base. Blitz steamed cauliflower to a fine crumb and squeeze out excess moisture. Add one egg, 1 Tbsp olive oil and season with salt and pepper to form a paste. Spread thinly on a lined baking tray and shape to a pizza round. Bake for 10 minutes in a hot oven, before adding the toppings of your choice and return to the oven until golden.
A whole roasted cauliflower never fails to impress, while its subtle flavour allows it to be paired with any number of flavour combinations, from bold and fiery Tandoori to the subtle creaminess of a classic cauliflower cheese.
