The first two Hell on Wheels businesses were launched in Whanganui and Cambridge last month and had been a hit, Cumming said.
"Both franchises have been running at near capacity on busy nights," he said.
"We've made it easier for those who want to own their own franchise – particularly young staff throughout our existing network, who have proven themselves in store management roles and are keen to take on further responsibility."
The mobile trailer stores include fully functional kitchens, a refrigerated bench, a deep fryer and sink, and were designed to look like a truck out of the film Mad Max.
Cumming said the Hell on Wheels franchise meant businesses could run profitably in smaller towns, where revenue was not expected to be as high in the main centres.
