The Michelin-starred chef shares his travel memories.

What was your greatest holiday?

A trip to Costa Rica many years ago was very special, especially staying in the jungle.

And the worst?

A horrible last minute holiday to Marmarus in Turkey. The website said lovely little fishing village on the Mediterranean. Well, it was not.

If we bump into you on holiday, what are you most likely to be doing?

Shopping for food in the market. Probably buying fish and vegetables, with my children complaining that we have been food shopping for over two hours.

If we could teleport you to one place in New Zealand for a week-long holiday, where would it be?

Well it looks like there are so many amazing places with stunning views, but I hear from a friend Wellington Harbour is quite spectacular.

What's the dumbest thing you've ever done when travelling?

Travelling with the wrong passport.

What's your best travel tip?

Always travel lightly and take an adaptor plug.

What was the most memorable meal you've had while travelling?

In Costa Rica, having lobster for lunch by the sea then falling asleep in a very comfortable hammock.

What's the best thing you've brought back from a trip?

I usually come back with cheese or wine or olive oil depending on where I am.

What's the next trip you've got planned?

Family holiday in Puglia, Southern Italy.
