Serves 4

• 500g beef fillet
• 1 Tbs oil
• 1 tsp paprika
• 1 tsp cinnamon
• ½ tsp allspice
• 400g green beans, blanched
• ½ cup boiling water
• 1 tsp cumin
• 1 tsp coriander
• 1 tsp turmeric
• ½ cup couscous
• ½ cup toasted almonds
• ½ roasted pepper
• 1 cup shredded spinach
• ¼ cup coriander leaves
• Juice of 1 lemon
• 2 Tbs olive oil
• Salt and freshly ground pepper


1. Rub the beef with the oil, paprika, cinnamon and allspice. Heat barbecue and cook the beef to your liking. Set aside.

2. Cook the beans in boiling water. Strain.

3. Place the water, cumin, coriander and turmeric into a bowl. Sprinkle on the couscous, cover and leave to sit for 10 minutes, then fluff with a fork.

4. Add the almonds, roasted pepper, spinach, coriander and beans to the couscous. Then add lemon juice and olive oil. Season.

5. Arrange on a plate. Slice the beef and place on top.
