It might say "extra dry" on the label, but make no mistake, this plucky prosecco is packed with apple, pear and soft lemony loveliness, a seam of piercingly vibrant acidity and generosity in the mid-palate. Serve super-chilled to enjoy the flintiness on the finish. Prosecco is made from a grape known as "glera" and the Canella family have been at the forefront of this fine fizz since 1947.

Morambro Creek Padthaway Cabernet Sauvignon 2012, $34
From Padthaway, on the southern tip of South Australia, near the Limestone Coast, this is gloriously glossy, ruby-black in colour. As soon as it hits the glass, a waft of fresh spearmint, eucalypt and smoked berries clouds the nostrils in the nicest possible way. Four years in the bottle has given this wine density, dark fruit saturation and a rich, sensual texture on the finish.
Pair with: slow-cooked, sticky, spicy ribs.
