Serve ginger plum crumble with natural yoghurt, icecream or cream. Photo / Doug Sherring
1 Make a crumble topping by blitzing broken gingernut biscuits, brown sugar, hard butter and a little ginger powder.
2 Layer a baking dish with half stoned plums, sugar or honey to taste (remember the crumble is quite sweet), enough water to fill the bottom quarter of the dish anda cinnamon stick.
3 Cover with tin foil and bake in a medium oven until tender.
4 Remove the cinnamon stick and spread the crumble across the poached plums. Sit the cinnamon on top of the crumble and bake until the topping is crisp.
5 Serve with icecream or cream or both. If you find cream a bit much, stir in some natural yoghurt to sharpen it up.
