Recipe: A platter of Grey Lynn goodies

Grant Allen finds some local meat treats

Today, many butchers are skilled in the old crafts of brining, curing, smoking and pickling meats. This charcuterie craft has greatly expanded their offerings, as each butcher creates a unique product with a personal twist. My Gladstone Butchery also sells great pies they make on the premises, as well as ready-to-cook sausage rolls and pasties.

My Grey Lynn platter is an easy starter or nibbles to have with drinks.

1. Arrange smoked salmon, slices of chorizo (the cooked version, obviously) and bresaola.

2. Make up a horseradish cream: mix equal quantities of sour cream and prepared horseradish cream, add a squeeze of lemon juice and mix well.

Serve with some crusty bread (toasted, if you prefer), wedges of lemon and some crunchy greens such as lettuce, gerkhins or cornichon.
