Serves 4
4 ramekins
1 Tbs butter
4 slices ham off the bone
4 free range eggs
4 Tbs cream
Salt and pepper
8 Toulouse sausages from L'Authentique or use the best quality breakfast sausages you can find
1 Preheat the oven to 180C. Grease the ramekins with butter then line with slices of ham.
2 Crack one or two eggs, depending on the size of the ramekins, into each then pour in the cream and season.
3 Lay the sausages in a baking dish [don't prick or the moisture will be lost] and bake in the oven with the eggs for 10 minutes.
