"Last year I had an epiphany - I want to run a restaurant where I cook food I like to eat every day.
Paris Butter will be ingredient-focused, and will be a classic French bistro with a deft touch. For example, on the menu will be 'escargots' but done with Cloudy Bay clams, to add a New Zealand flavour."
Canvas will book out the restaurant exclusively for readers on Tuesday, May 24, with guests enjoying a four-course meal chosen by Nick, with accompanying wines.
During the evening Nick will be in conversation with Canvas editor Michelle Hurley. Tickets are limited, so please book quickly to avoid disappointment.
