Following four days of Easter feasting we thought a light supper might be in order tonight and these smoked fish toasts are looking very yum. Ray McVinnie has plenty more supper ideas for days when the mood is relaxed and the appetite light. And light is where Geoff Scott has gone with his pasta recipes. Pappardelle is as receptive to greens and herbs as it is a rich ragu. A few tomatoes, some basil and parmesan are all it takes to make his spaghetti moneghetti and ramen noodles with haloumi and pesto is fusion at its best.
