BLT orzo salad recipe

This is a filling salad that travels well for an office lunch.

It will keep in the fridge for a few days without losing flavour or texture, so you can make a batch and share it out, or divide it up to cover several lunches.

BLT orzo salad

Serves 4

Ingredients

250g Diamond orzo

6 streaky bacon rashers

½ small iceberg lettuce, roughly chopped

100g cherry tomatoes, halved

½ capsicum, diced

1 spring onion, finely sliced

Dressing

3 Tbsp olive oil

1 Tbsp lemon juice

½ tsp Dijon mustard

1 garlic clove, crushed

½ tsp salt

Black pepper to taste

Method

1. Cook the orzo as per the directions on the package. When cooked, drain and rinse well under cold water. Drain again, tip into a large bowl, and set aside.
2. Heat a frying pan to medium-high and cook the bacon until crispy. Drain on a paper towel, and then break into small pieces. Add to the bowl with the pasta.
3. Add the chopped lettuce, cherry tomatoes, capsicum, and spring onion and mix with the orzo.
4. Combine all the dressing ingredients in a small jar and shake well. Taste and adjust the seasoning if required. Pour the dressing over the salad and toss gently.
5. This salad is best served at room temperature or just slightly chilled.
