Five a day Rev up the cool summer salads with sharp tangy pomegranate seeds. Try pomegranate topping a cucumber, bean and chopped pistachio nut salad; with avocado and feta or tossed through with prawns, mint and mango or over grilled tuna and basil.
Bye bye birdy Pomegranate in a light wine jussauce or a chopped salsa (with tomato, coriander or mint, even toasted pine nuts) is great on chicken, duck, quail or poussins.
Modern twist Update your usual banana cake or pavlova with a pomegranate sauce (with or without sugar syrup), tumble on top of figs baked in orange juice or swirl through a fruit salad. Dazzle the champagne cocktails with a dash of pomegranate syrup, topped with seeds.
