Training five nights a week up in Palmerston North, including separate gym sessions and early morning workouts at home to build up her fitness, van Echten also wanted to drop 5kgs to be closer to her opponent who she described as "younger, shorter, faster".
Going under her fighting name Vixen, van Echten said she is proud of how much she has improved in that short time.
"I'm a lot quicker and my punching technique is a lot better. I've got really supportive trainers at Velocity boxing gym, they're just awesome at teaching."
While avoiding injury, van Echten admits she has taken a few big hits that have left her feeling a bit spaced out.
"It's painful but it hasn't changed anything. You have to take a quick breath and carry on or you'll just continue to be hit.
"It's frustrating more than anything. It makes me want to get better and deliver the punches instead of receiving them."
She knew the training would be tough but it's something she looks forward to.
"I'm not worried about getting hurt. If I do it's too bad."
Van Echten will have just one fight on the night, lasting about three rounds.
"This is just the beginning. "I still need to learn so much more before I can call myself a real boxer.
"I've definitely got the boxing bug. I knew I would. I'd like to keep training and maybe take on more fights, so we'll see."
