The TV host, 38, told British media the handsome Kiwi impressed her during their courtship with his cooking skills.
The Daily Mirror said the couple sold the rights to their nuptials to a magazine "in a deal believed to run to six figures".
Ms Jones told the Mirror the couple might move to New Zealand.
"It's still an unresolved issue. It's a big thing to ask him to give up his family and home for good. The issue of New Zealand is still there."
Cardiff Castle had a banqueting hall for 100 guests.
Wedding guests were expected to enjoy a fireworks display after the ceremony, with the local council putting on a show a short distance from the castle.
