Ingredients
2 | Carrots, sliced (Main) |
2 | Parsnips, sliced (Main) |
1 handful | Broccolini, halved (Main) |
2 | Shallots, peeled |
1 cup | Pumpkin, finely diced |
1 cup | Kumara, finely diced |
1 | Chilli, sliced, seeds removed |
1 Tbsp | Fresh ginger, finely chopped |
2 | Garlic cloves, crushed |
2 Ltr | Vegetable stock, good quality (Main) |
Directions
- Place all ingredients in a crockpot and cook on low for 6 to 8 hours
- Serve with fresh crusty bread
