Wild rice has a delicious nuttiness and a slightly crunchy texture - it’s perfect with walnuts. I have added the watermelon and mint to provide a hint of sweetness and a fresh summer zing.
Ingredients
| ¼ cup | Walnuts, chopped |
| 1 cup | Wild rice, cooked (Main) |
| 1 tsp | Flaky sea salt |
| 1 to taste | White pepper, freshly ground |
| 1 cup | Watermelon, diced (Main) |
| 1 cup | Tomato, ripe, diced |
| ½ cup | Red capsicums (Main) |
| ½ cup | Red onions, diced |
| 2 tsp | Red chillies, finely chopped |
| 1 Tbsp | Sherry vinegar |
| 1 Tbsp | Walnut oil |
| 1 Tbsp | Vegetable oil |
| 2 Tbsp | Parsley, sliced |
| 2 Tbsp | Coriander, sliced |
Directions
- In a bowl mix together cooked rice, walnuts, salt and pepper and spoon on to a platter.
- Gently mix together watermelon, tomatoes, capsicum, onion, chilli, vinegar and oils — arrange alongside rice mix and sprinkle with parsley and coriander.
- Combine all ingredients together when serving to guests.
