Wild rice has a delicious nuttiness and a slightly crunchy texture - it’s perfect with walnuts. I have added the watermelon and mint to provide a hint of sweetness and a fresh summer zing.
Ingredients
¼ cup | Walnuts, chopped |
1 cup | Wild rice, cooked (Main) |
1 tsp | Flaky sea salt |
1 to taste | White pepper, freshly ground |
1 cup | Watermelon, diced (Main) |
1 cup | Tomato, ripe, diced |
½ cup | Red capsicums (Main) |
½ cup | Red onions, diced |
2 tsp | Red chillies, finely chopped |
1 Tbsp | Sherry vinegar |
1 Tbsp | Walnut oil |
1 Tbsp | Vegetable oil |
2 Tbsp | Parsley, sliced |
2 Tbsp | Coriander, sliced |
Directions
- In a bowl mix together cooked rice, walnuts, salt and pepper and spoon on to a platter.
- Gently mix together watermelon, tomatoes, capsicum, onion, chilli, vinegar and oils — arrange alongside rice mix and sprinkle with parsley and coriander.
- Combine all ingredients together when serving to guests.
