Using wild greens (from safe sources) to make a delicious pesto - yum! Because it's dairy free it's nice and light and cheap!!
Ingredients
1 bunch | Salad greens, Chickeeed, nasturtiums, plaintain, dandelion |
100 g | Sunflower seeds, Toasted |
1 whole | Apple, Could use date paste |
1 clove | Garlic |
200 ml | Olive oil, Mix with other oil if you prefer |
1 splash | Apple cider vinegar, Or lemon |
1 | Salt |
Directions
- If you have a Vitamix you simply whizz it all together - easy. Otherwise it takes ages chopping, pounding in a mortar and pestle
- Keep it the fridge. Stir it through pasta, add it to salads or whack it on some crackers. It's simply one of those useful things to have.
