- Place ham on a board. Remove skin and score fat in a diamond pattern.
- Mix mustard, honey and cloves together. Brush over surface.
- Weigh ham and calculate cooking time allowing 10 minutes per 500g. Bake at 180 degrees C for calculated time. (Alternatively cook on a lidded barbecue that has been preheated to medium, using side burners.) Place ham in a baking dish. Cover with foil and place in the centre of the barbecue away from direct heat. Cover and cook for calculated time.
- Twenty minutes before the end of cooking, remove foil and baste ham with honey mixture.
- Continue to cook for calculated time, basting ham with honey mixture during cooking. Serve hot with grilled mango and pineapple.
Grilled Mango and Pineapple
- Cut pineapple in half and then into wedges. Wash mangoes, cut in half and remove stones.
- Grill fruit on a clean barbecue hot plate or under a grill in the oven until lightly golden.
