As is the case with whitebait, this recipe is really dependent on how much you can catch or afford as it does get quite pricey.

Ingredients
1 loaf | White sandwich bread, use as much as needed, crusts removed (Main) |
1 knob | Softened butter |
2 Tbsp | Extra virgin olive oil |
250 g | Whitebait, or as much as you can catch (Main) |
¼ cup | Flour |
1 bunch | Chopped parsley, fresh |
Directions
- Butter the bread and set aside.
- Toss the whitebait in flour.
- Heat a frying pan and add the olive oil.
- Quickly fry the whitebait and divide over the bread.
- Season with salt and pepper, sprinkle over the parsley.
- Roll the bread up encasing the whitebait and eat quickly. Enjoy.
