Puha and Pakeha food truck owners Belinda and Jarrad started in 2014 with the aim of reconnecting people with the kai of Aotearoa. “We saw a gap in the market for anything that represented Māori kai and native NZ ingredients so all our dishes are designed to hero Māori kai and native NZ ingredients,” says Belinda. “Watercress is commonly found around waterways in NZ and used in Māori cuisine. We have made a dip with it and serve it with our fried chicken. It is also great with Kūmara crisps”.

90 g | Watercress (Main) |
1 | Spring onion, chopped |
1 Tbsp | Lemon juice |
1 Tbsp | Horseradish |
½ tsp | Salt |
¼ tsp | White pepper |
250 g | Sour cream (Main) |

Directions
- Place all ingredients in a food processor or bowl with stick blender. Process/blend until all ingredients are finely chopped and blended through the sour cream. Serve.
