This chicken with bite goes perfectly with a nutty slaw.
Ingredients
| 2 | Chicken breasts (Main) |
| 3 Tbsp | Cream cheese |
| 2 cups | Spinach |
| ½ cup | Parmesan cheese |
| 2 tsp | Wasabi paste (Main) |
| 2 | Bamboo skewers |
| ¼ cup | Flour |
| 1 | Egg |
| ⅓ cup | Panko breadcrumbs |
| 1 | Salt & freshly ground pepper |
| 1 | Extra virgin olive oil |
Peanut slaw
| 1 cup | Green cabbage |
| 1 cup | Red cabbage |
| 1 | Chives |
| 1 | Fresh parsley |
| 2 tsp | Balsamic |
| 4 Tbsp | Mayonnaise |
| ½ cup | Peanuts (Main) |
| 1 to taste | Salt & freshly ground pepper |
Directions
- Preheat oven to 180C.
- Process cream cheese, spinach, cheese and wasabi together to form and paste and lightly season. Stuff chicken breast and skewer shut.
- Roll breast in flour, then egg, then breadcrumbs.
- Place on a well-oiled baking dish and bake for 30-35 minutes or until the chicken is cooked right through.
- To make Peanut slaw mix together both cabbages, and herbs. Just before the chicken is ready, mix in the mayo, balsamic, peanuts and season to taste.
