|2 Tbsp||Caster sugar|
|1 splash||Marsala, optional, also use sheery or a dash of balsamic vinegar|
|1 tsp||Butter, heaped|

- Hull and slice the strawberries and put into a bowl. Sprinkle with the sugar, stir and set aside for a few minutes until the juices start to run.
- Add the optional splash of marsala or sherry or dash of balsamic vinegar.
- Tip everything into a small pot or frying pan and add the butter.
- Put over a low heat and stir gently until the syrup starts to boil.
