Ingredients
| 2 heads | Garlic (Main) |
| 2 | Kumara, small |
| 1 can | Butter beans (Main) |
| ⅓ cup | Walnuts, chopped |
| 1 can | Borlotti beans |
| 1 | Orange, or lemon, zested |
| 1 Tbsp | Mayonnaise |
| 1 handful | Fresh herbs, chopped, such as chives and marjoram |
Directions
- Roast garlic and kumara until soft. Skin the cloves and the kumara and mash together with a little salt and olive oil.
- Strain butter and borlotti beans into a bowl. Add the mash, chopped walnuts, a little orange or lemon zest, herbs and mayonnaise. Lightly crush together with a fork, season with salt and freshly ground black pepper, and serve with a grilled steak or fish.
