If you can’t find turkey mince, make your own by grinding up the dark meat of a turkey.
Ingredients
5 | Shallots, or 1 large onion |
3 large | Mushrooms |
3 cloves | Garlic |
1 handful | Coriander |
½ tsp | Salt |
½ tsp | Cayenne pepper |
½ tsp | Turmeric |
1 | Lemon, zested |
450 g | Turkey, minced (Main) |
¾ cup | Breadcrumbs, fresh |
6 | Burger buns, ciabatta |

Directions
- In the food processor blitz shallots, mushrooms, garlic and coriander until finely chopped. Add salt, cayenne pepper, and turmeric.
- Gently fry this mix until fragrant and paste-like, about 20 minutes. Add the lemon zest, season and remove from heat to cool.
- Add turkey mince, breadcrumbs, fresh pepper and a squeeze of lemon. Mix well, press into burger shapes on baking paper and chill.
- To construct burgers, grill patties on a hot plate for 2-3 minutes each side and serve in warm ciabatta buns with a simple coleslaw, a dollop of chipotle mayonnaise and a few bread and some pickles.
